Kurutulmuş pancar, taze kırmızı pancar kullanılarak kurutulup üretilen ve üretim sonucunda elde edilen kurutulmuş üründür. Taze pancar kurutulmadan önce yaklaşık %87 civarında su içerir. Kurutma sonucunda yaklaşık 10 kg pancar kullanılarak 1 kg kuru pancar elde edilir. Bu sebeple kuru pancar besin değerleri özellikle karbonhidrat, vitamin, protein, yağ gibi oranlar çok yükselmiştir.
